1. Gulab Phirni
Cooking Time: 30 minutes
Total Time: 30 minutes
Skill required: easy
You Will Need:
a) 1 tbsp rose petal powder
b) 1/2 cup milk
c) 1 cup basmati rice, soaked in water for about 15 to 20 minutes
d) 3 to 4 saffron strands
e) 2 tsp rose water
f) 1/4 tsp cardamom powder
g) 3 tbsp sugar
h) 2 to 3 cups milk
a) Rinse and soak the earthen bowl in water for about 10 to 15 minutes.
b) Blend the soaked rice and milk in a mixer blender.
c) Add the milk and rice paste in a pan.
d) Now, add the saffron, cardamom powder, rose petal powder, sugar and rose water.
e) Keep on stirring it until it becomes thick and lump free.
f) After it gets thick, transfer the phirni blend into the washed earthen bowl.
g) Top it with some fresh rose petals and refrigerate it for approximately 2 to 3 hours.
2. Pomegranate Rose Granita
Total Time: 3 hours 5 minute
You Will Need:
a) 1 and a 1/2 cups pomegranate juice
b) 1 tsp rose water juice
c) 1/4 cup sugar
d) Juice and zest of 1/2 lemon
a) Mix juice and sugar in a small saucepan over the low heat.
b) Stir this till the sugar get dissolved and now eliminate it from the stove.
c) Mix the lemon juice and rose water and leave it to cool down.
d) Transfer the blend into the 9*9 pan and put this in the freezer.
e) Freeze this till it gets soft for about 3 hours
f) Scrape off the surface using a fork for every 30 minutes to make it flaky.
g) Serve it immediately.
3. Buttery Rose Tea Cake
Total Time: 1 hour 20 minutes
You Will Need:
a) 1 tbsp and one tsp rose water
b) 2 bags of rose (such as Tazo Passion) hibiscus tea
c) 2 eggs
d) 8 ounces butter
e) 1 tbsp lemon juice
f) 1 and 1/4 cup sugar
g) 2 drops red food coloring
h) 2 tsp baking powder
i) 1 and 1/4 cup confectioner’s sugar
j) 1 and 1/3 cup all-purpose flour
k) 1 cup whole milk Greek yogurt
a) Heat the oven to 350 degrees and grease a 9*12 baking pan.
b) Keep it to one side and cut the tea bags and transfer the contents into a tiny bowl.
c) Pour the adequate boiling water to cover the tea by 1/2 inch.
d) Steep it for about 10 minutes and stir together the baking powder and flour in another tiny bowl.
e) Simultaneously, melt the butter in a small saucepan over the low heat.
f) Transfer the melted butter into a big bowl.
g) Stir eggs, yogurt, sugar, and rose water along with the reserved tea and steeping liquid.
h) Softly, add the flour blend and keep on stirring it.
i) Transfer the mixture to the prepared pan.
j) Bake it till it gets fragrant and using a toothpick insert in the center of the cake.
k) Do this for 30 to 35 minutes and then transfer the cake to the cooling rack.
To make the topping:
a) Mix lemon juice, 1 tbsp rose water, confectioner’s sugar, food coloring, and water in a tiny bowl.
b) After it gets cooled, transfer the mixture over the top.
c) Keep it to one side to firm up for 15 minutes before slicing or serving.
4. Rose Panna Cotta with Honeyed Apricots
Total Time: 6 hours 15 minutes
You Will Need:
a) 1 tbsp plus one tsp rose water
b) 1/3 cup sugar
c) 1 and 1/3 cup heavy cream
d) 1/3 cup chopped dried apricots
e) 2 tbsp water
f) Pinch of cardamom
g) 1/3 cup whole milk Greek yogurt
h) 3 tbsp honey
i) 1 heaping tsp gelatin
j) 1/2 tsp vanilla extract
k) 1/3 cup milk
l) Fresh mint, for garnishing (optional)
a) Mix the sugar and cream in a tiny saucepan.
b) Simmer this over medium-low heat and stir it till the sugar gets dissolved.
c) Switch off the heat and transfer the milk into a tiny bowl.
d) Sprinkle with the gelatin and after it gets soft stir the milk into the cream blend.
e) Add rose water, yogurt, and vanilla.
f) Whisk it till it becomes smooth and then transfers it into four tiny bowls or 6 to 8-ounce ramekins.
g) Cover it with plastic wrap and place it in the fridge till it gets set (for about 5 hours or overnight).
h) Mix apricots, water, and honey in a tiny saucepan over the medium-low heat.
i) Cook it and stir this frequently until the honey melts and apricots get soft (about 5 minutes).
j) Sprinkle cardamom powder and mix it again.
k) Eliminate it from the heat and leave the blend to cool down at room temperature.
l) Spoon a heaping tsp over the Panna Cotta.
m) Garnish it with a mint leaf.
