Tamarind is a fantastic fruit which can be used to add a tangy flavor to many Asian and Caribbean dishes. In fact, in spite of adding it to the sambar, you can also make other wonderful cuisines like as chutneys, pickles, candies, jam, etc. So, check out the common tamarind recipes.

1. Sambar

Sambar is a delicious side dish which is served with idly, rice, and dosa in South India. Check out the sambar recipe made using shallots and Tamarind.

You Will Need:

a) 1 and ½ cups shallots – roasted in oil
b) Salt
c) 10 curry leaves
d) 1 tbsp vegetable oil
e) 2 cups water
f) 1 green chili
g) ¼ tsp asafoetida
h) ½ tsp mustard seeds
i) 1 tbsp coriander leaves (finely chopped)
j) ½ cup moong dal (pressure cooked and mashed)
k) 10 grams tamarind
l) 1 tsp sambar powder (heaped)

Steps:

a) Soak tamarind in one cup water for about fifteen minutes.
b) Heat one tbsp of oil in a medium-sized pan on medium to high flame.
c) Add shallots and saute until they turn golden brown.
d) Extract tamarind concentrate and add this to the shallots.
e) Add sambar and asafoetida powder along with the remaining water and let the mixture to boil.
f) Lower the heat and simmer the blend for 10 to 12 minutes or till the shallows turn soft.
g) Combine the mashed dal and add salt.
h) Cook it for 2 to 3 minutes again and eliminate it from the heat.
g) Keep it to one side and heat the rest of the oil in a tiny pan.
h) Add mustard seeds to it and allow it to splutter.
i) Now, add green chilies and curry leaves and then saute it for thirty seconds.
j) Transfer this blend over the sambar and add coriander leaves.

2. Tamarind Soup

This Soup is a wonderful remedy for a runny nose, scorching fever, and sore throat. You just need to drink one glass of this soup to drive the cold away.

You Will Need:

a) 10 grams tamarind (soaked in hot water)
b) Salt
c) Pinch of Turmeric powder
d) 1 tsp clarified butter
e) 1 tsp cumin seeds
f) 1 tbsp black pepper powder
g) ½ tsp mustard seeds
h) ½ tbsp cumin seeds powder
i) 10 curry leaves (roughly chopped)
j) 2 cups water

Steps:

a) Heat the clarified butter in a deep pan on medium to high heat.
b) Now, add cumin seeds and mustard seeds to it and let them splutter.
c) Add curry leaves and saute it for about thirty seconds.
d) Meanwhile, extract the tamarind gravy and transfer the tamarind extract into a pan.
e) Add salt and spice powder to it.
f) Allow the blend to boil and lower the flame.
h) Simmer it till the tamarind loses its flavor.
i) Add the seasoning and serve Tamarind Soup hot.

3. Tamarind Chutney

You Will Need:

a) 1 cup tamarind
b) ½ tsp red chili powder
c) 2 cups water
d) Salt
e) ½ cup dates (pitted and finely chopped)
f) ½ tsp chaat masala
g) ½ tsp cumin seed powder
h) ¼ cup jaggery (grated)

Steps:

a) Soak dates and tamarind into the hot water for thirty minutes.
b) Squeeze out the blend and extract the pulp.
c) Put the saucepan on a medium-high flame.
d) Add mixture to it and combine the spices.
e) Boil the mixture and lower the flame.
d) Simmer it for 20 minutes and cool down.
e) Serve Tamarind Chutney with rotis, idlis, and chaat.

4. Tamarind Jam

You Will Need:

a) 500 grams tamarind pods
b) 3 cloves (roasted and crushed)
c) 1 and ½ cups caster sugar

Steps:

a) Peel the pods and add this to water.
b) Now, add sugar and crushed cloves to it and combine well.
c) Boil the blend and lower the flame to medium.
d) Simmer it for ninety minutes and cool it down.
e) Transfer it an airtight container and put it in the fridge.

5. Tamarind Candy

You Will Need:

a) 20 fresh tamarind pods
b) ½ tsp salt
c) ½ tsp chili powder
d) 5 tbsp sugar

Steps:

a) De-seed the tamarind and cut it into tiny pieces.
b) Shape them into small balls.
c) In a small bowl, mix sugar, chili powder, and salt to it.
d) Add the balls to this blend and roll them to ensure even coating on them.
e) Store them in an airtight container.
