1. Thandai Kulfi Recipe

Preparation time: 20 minutes
Cooking time: 60 minutes
Total time: 80 minutes

a) 1/2 cup Sugar
b) 3 liter Milk

For Thandai Paste

a) 1/4 cup Pistachios
b) 1/4 cup Almonds (blanched and peeled)
c) 2 tsp Cardamom Powder) 1/4 cup Cashew nuts

e) 1/2 tsp Cinnamon Powder
f) 8 Whole Black Pepper Corns
g) 2 tbsp Poppy seeds
h) 1 tbsp Fennel seeds

a) Make a paste of that masala by blending all the ingredients in a blender.
b) Keep it on one side and condense the milk.
c) For this, heat milk in a saucepan and boil it.
d) After it gets cooked, lower off the heat and simmer it with continuous stirring.
e) Do this, till you get more than half its quantity.
f) Dissolve sugar in it and stir in the Thandai Paste mixture.
g) Switch off the heat and leave it to cool down completely.
h) Transfer thandai kulfi milk in the molds till 3/4th is full and make them airtight.

i) Put it in the freezer and keep it for fifteen hours or more.
j) Once it gets frozen, keep out the molds in the water to quickly release them to the plate.
k) Serve chillled thandai kulfi.

2. Creamy Mango Kulfi Recipe With Cream Cheese

Preparation time: 20 minutes
Cooking time: 120 minutes

a) 400 grams Cream cheese
b) 250 ml Heavy whipping cream
c) 1 cup Mango Pulp
d) 1 cup ripe Mango (freshly peeled and diced)

Preparation time: 25 minutes
Cooking time: 45 minutes

a) 2 cups Orange Pulp
b) 1/2 cup Sugar
c) 2 tbsp Orange marmalade jam
d) 3 liters Milk

a) Firstly, prepare the shells of orange.
b) For this, use knife cut the oranges in half and scoop out the pulp.
c) Keep it to the one side and peel the thin skin of pulp and eliminate any seeds.

a) 1/2 cup Sugar
b) 1/4 cup Gulkand
c) 1/2 teaspoon Betel Nut
d) 3 liters Milk
e) 1 tsp Gulkand
f) 1 tsp Fennel seeds powder
g) 1/4 cup Almonds powder

a) Condense the milk by boiling it in a saucepan.
b) After it gets boiled, simmer the milk and do the continuous stirring.
c) Keep it doing this till the milk get lowered to half of its original quantity.
d) Add sugar, fennel seed powder, gulkand, almond powder saffron and stir it well into the Kulfi milk mixture.
e) Switch off the heat and allow it to cool down.
f) Now, pour it into the molds till 3/4th gets full and seal them airtight.
h) Put them in the freezer for more than fifteen hours.
i) Serve.

5. Rose Petal and Pomegranate Ice cream

Servings: 6


a) 2/3 cup sugar
b) 4 large pomegranates
c) 1 cup fresh rose petals (chopped)
d) 500 ml fresh cream

a) De-shell the pomegranates and take off the seeds.
b) Put the seeds in a blender and blend them well.
c) Filter the juice via strainer or muslin cloth.
d) Transfer the juice in a heavy saucepan.

f) Switch off the flame and cool it down.
g) Whisk the fresh cream for sometime till it gets smooth.
h) Transfer the juice, rose petals and sugar in it.
i) Whisk for about 7 to 10 minutes until all the ingredients blended well
j) Transfer the blend into a freezer container with a lid and freeze it for nearly 4 to 6 hours.
k) Scrape via semi set ice cream and again freeze it for 4 to 5 hours.
l) Scoop it out and serve Rose Petal and Pomegranate Ice cream in

the dessert bowls.
